Finding a place to eat on New Year’s Day in Kyoto proved to be a challenge. Most independent restaurants were closed, leaving only chain restaurants open. We eventually decided on Ippudo, a well-known ramen chain with locations also in Auckland. I was curious to see how the experience in Kyoto compared to what I was familiar with.
I ordered the Tonkotsu ramen, which came with two types of char siu (Shiramaru and Akamaru), four boiled eggs, wood ear fungus, seaweed, and spring onions. The food arrived quickly, and I was immediately impressed by the presentation of my bowl. After mixing everything, I sampled the broth, which was warm, hearty, and flavorful. It was delicious and comforting. The two different types of chat siu were also perfect and complemented the dish very well. The difference between the char siu was that there were other types of cut from the pig and some slight seasoning differences, but it was hard to tell due to having it swimming in the soup. With the ramen, I opted for the firm noodles, and they were cooked perfectly, with just the right amount of bite. Wood ear fungus added a nice texture contrast, making the ramen even more enjoyable.

Surprisingly, the gyoza, which was served boiled instead of pan-fried. Despite this, they were incredibly juicy and flavorful, especially when dipped in soy sauce.
Overall, it was a fantastic meal. While the restaurant has limited seating, the food is served quickly, and the quality is outstanding. The place was clearly popular with locals, as there were lines both when we entered and when we left. Despite being part of a chain, Ippudo maintains a high standard, and the ramen was far superior to anything I could find in Wellington. I was thoroughly impressed by the taste, service, and overall experience.
