On my last night in Melbourne, I craved ramen and headed to Hakata Gensuke Tonkotsu Ramen on Russell Street. Despite the 25-minute wait in line, my attention was caught by HK Cafe across the road, which I’ll have to try next time due to its promising reviews.

Once inside, I ordered their signature Tonkotsu ramen with firm noodles and some Chicken Karaage. The aroma of the ramen was enticing, and I added spicy takana, garlic, and freshly ground sesame seeds to enhance the flavours. Each addition elevated the soup, especially the spicy takana which provided a good kick. The noodles were perfectly cooked, although I wished for an extra serving.

The Chicken Karaage was perfectly cooked, and I particularly enjoyed the side of salt and spices for dipping, adding a unique flavour to the dish.

Overall, it was another satisfying bowl of ramen, just like last time. The thinly sliced pork was cooked beautifully, and I appreciated the variety of textures in the dish, including the wood ear mushrooms. Just be aware there are several Hakata Gensuke in Melbourne some selling Chicken based broth vs Pork based broth.
