I discovered this place through Instagram and its annoyingly accurate algorithm, which somehow knew I was looking at places to eat in Singapore while I was travelling. Different people kept posting about it and saying how good it was, so I decided to try it.

When I arrived, I was interested to see how young the cooks were; they even looked like brothers. I later learned someone started this hawker stall in their early 20s in 2021, and it has since expanded into other hawker centres, selling their Hokkien mee. One of the first things that gave it away as a younger enterprise hawker stall was that they accepted electronic payments, which still isn’t particularly common in hawker centres, where cash is often preferred.

As I explored the hawker centre and wanted to try a few other things, I ordered a small portion but paid an extra $2 for some additional seafood. While I waited for my food, I noticed the guy cooking had it all down pat. He just knew exactly what he was doing. Also, the small wasn’t that small.

Once I had my food and sat down, I immediately smelled the dish. It also looked incredible. I loved that there were two calamansi to squeeze over the noodles, and I especially liked that the pork fat stayed on the edge rather than being mixed through the noodles, so they didn’t get soggy. The pork was also added to the side, and the amount of chilli was glorious.

First taste — and wow.

That wok hei was unbelievable. The aroma coming from that wok was game-changing. The prawns were incredibly sweet, and the chilli sambal was so good. I also loved that the dish had three types of pork: pork fat, which gave it an incredible texture; pork mince; and thinly sliced pork belly mixed throughout the noodles.

The gravy that tied everything together was perfect, and I also loved the combination of two different types of noodles: rice noodles and egg noodles.

Overall, what a dish.

What I generally love about hawker stalls is that they focus on one dish and do it really well, and this place is no exception. The layers of flavour, combined with the wok hei they get from that wok, make for a near-damn-perfect plate of noodles.
