While I was at the same hawker centre as Ji Ji Noodle House, I decided to try the laksa at Ah Heng Curry Chicken Bee Hoon Mee. This stall has received plenty of accolades, and there was already a line, so I figured I should at least try their laksa.

Once you get closer to the stall after lining up, you can’t help but notice the huge vat of laksa they use. The preparation is quite fascinating. First, they cook the noodles separately in a large boiler. Once cooked, they add the noodles to a bowl with the laksa soup. In the big vat, you’ll also find deep-fried tofu that’s soaked up all that flavour for ages, along with chunks of potato. They add the poached chicken to the bowl, then pour the laksa from the small bowl back into the large vat. They then ladle the soup back into the bowl and serve it to you.

I tell you, this is one way to really get some flavour into your noodles!

You can also choose what type of noodles you want, from thin rice noodles to egg noodles or bee hoon, which are thicker rice noodles. I chose the bee hoon version.

As soon as I got my small bowl, I couldn’t believe how much food was packed into it. I felt a little guilty because I had only planned to try it and probably eat about a third of it.

Anyway, once I found a seat, I dug in and tried the laksa. I was immediately surprised by how warm and comforting it felt, with all the different spices and ingredients coming together in the broth. There was so much flavour packed into that little bowl, and the combination of the noodles, chicken, tofu, and potato made it much more substantial than I expected.

I really liked the tender chicken they put inside the laksa and obviouly they use the chickens to create their stock, but i do wonder how many chickens they actually use to create their laksa to sell for the day. The bee hoon noodles worked really well. The potato was super soft and tender, and the deep-fried tofu nearly fell apart when you tried to pick it up with your chopsticks.

Overall, a good laksa, is it my favourite, no not really but was still very good and packed with different ingrediants. Plus, I don’t really know how Singapore people eat this type of food in the humid weather. I was sweating like a tap after eating it.
